Warm the Grill

Grilling by the truckThe last holiday weekend of the summer is upon us, and most people use Labor Day as a good excuse to gather friends and family around the grill. It shouldn't be any different at the truck stops and rest areas, right?

By the time Labor Day comes around, the thought of another burger is about as warm as the inside of burnt hotdog. Here's a super-easy marinade recipe for some juicy chicken kebabs that will draw some new friends your way and please your taste buds.

Zesty Marinade:                            
1 part mayonnaise
2 parts Italian dressing
Crushed red pepper to taste

Mix all three ingredients together and then add chicken breast chunks and your favorite veggies to the mix. Let it sit for at least 4 hours before you skewer and grill.

This is one that you can prepare the night before you hit the road and let it ride in a cooler all day until you're ready to grill. It's been tried with other meats, but chicken holds the flavor best. Our favorite veggies to pair it with are mushrooms, sweet onions, bell peppers, and fresh cherry tomatoes!
